Prepare to be dazzled with creative chocolate-infused cuisine and spectacular Petit Piton views at Rabot Restaurant and Cacao Bar. Warm woods, ceiling fans and an open-air design feel very colonial cool, with guests sipping cocktails stirred with chocolate and feasting on everything from freshly kneaded cacao pastas to just-caught fish glazed with coconut and cacao sauce. Poolside, it’s all light bites, nibbles, smoothies, mocktails and cocktails served until 8pm.

Open for breakfast, lunch and dinner, you can start your day with fluffy pancakes and a caffeine fix from wild coffee plants grown on the estate, or go classic with French toast, a smoothie bowl and eggs any style. Dinner dials up the decadence with slow-cooked local pork, beef fillet roasted in cacao and scallops basted in a chocolate-citrus sauce. And of course, it’s impossible not to love that view; the iconic Petit Piton watching over you as you as you toast the night with an aged rum fizz, a chocolate chaser or a cacao tea.

Save room for dessert – The Story of Chocolate in Ice is a trio of melt-in-the-mouth puddings charting the progression from pod to chocolate in three stages.

Temptation is just a few barefoot steps away at the Beauté de Cacao Spa, a head-to-toe sanctuary powered by therapies that use ingredients grown fresh on the estate. Open-sided treatment rooms have glorious Petit Piton views and are the perfect place to catch a cooling tropical breeze whilst being scrubbed, buffed and soothed. All treatments are at an extra cost.

A complimentary shuttle bus that is scheduled twice a day takes guests to Malgretoute beach where there’s excellent snorkelling offshore. The hotel also offers a Boucanier Underwater Explorer tour of the west coast (at an extra cost), taking you to sites including Anse Cochon and Jalouise where you can snorkel and swim the coral reef walls. Scuba divers will find wrecks at Anse Cochon Bay, Anse Chastenet and Fairyland that are home to colourful coral, angelfish and turtles.

Rabot Hotel has lots of impactful initiatives in place, including its Planet Pledge which is a brand-wide promise to reduce energy, plastic and food waste. Sitting on a nearly 300-year-old working organic cacao farm, produce is sourced on site whenever possible, and locally when needed. 100% organic certified beans and crops are grown on the estate and fruit, vegetables and herbs are picked from the gardens. Every part of the cacao pod is used to ensure no waste – the pulp is used for sorbets, the nib for sauces and chocolate drinks, the shell for tea and stock and the husk for organic composting. Natural rainwater is harvested for laundry and kitchen showers whilst hot water is powered by solar energy.
